Ingredients
Blend
- 1/4 c pumpkin seed butter
- 1/2 c olive oil
- 1 c basil
- 1/4 c parsley
- 2 TBSP lemon juice
- 1 1/2 cloves garlic
- 1/2 tsp salt
Serve
- Sliced heirloom tomatoes
- Mozzarella or burrata
- Fresh basil leaves
- Balsamic
- Olive oil or pumpkin seed oil
- Sea salt and pepper
Preparing
- Slice tomatoes and mozzarella.
- Spread medium to thick layer of pesto over each mozzarella slice and layer with tomato and fresh basil leaf
- Drizzle with balsamic and/or pumpkin seed oil, sprinkle with sea salt, pepper, and serve.
